1 cut up chicken
Flour
Crisco
salt/pepper (to taste)

Cut up chicken and wash. Salt and peper each piece and roll in flour and set aside. Fill skillet with about 1 1/2 inch of Crisco and heat until very hot. Drop in the pieces of floured and seasoned chicken and cook over mediun heat until brown on both sides. For crispy chicken DO NOT put lid on skillet. Test for doneness by sticking a fork in several places and make sure meat is not red with pricked with fork. The thigh takes the longes to cook so test it first. When chicken is done remove from grease and place on paper towels to drain.

To make battered fried chicken - mix 1 eggs, well beaten, 1/2 cup milk - and proceed as above with seasoning and flour BEFORE frying in Crisco
