2 T butter
1 T flour
1 C heavy cream
1 egg yolk
salt and pepper to taste
2 T Sherry Cooking Wine
1 lb. cooked shrimp

Directions:
Directions:
Heat butter in large skillet. Sprinkle flour into butter and blend thoroughly. Gradually add heavy cream to mixture and cook, stirring constantly until thick and smooth (do not boil). Pour mixture over well-beaten egg yolk, stirring constantly with spoon or whisk. Salt and pepper to taste. Add 1 lb. cooked shrimp, seasoned with 2 T Sherry cooking wine. Heat throughout and serve over rice.
