2 C sifted flour
1/2 t salt
1/2 t baking powder
1 t soda
1 C shortening
1 C white sugar
1 C brown sugar, packed
2 eggs
2 C rolled oats
1 t vanilla
6 oz. pkg. semi-sweet chocolate chips
1/4 C coconut
1/4 - 1/2 C pecan pieces

Directions:

Sift together the flour, salt, baking powder and soda. Cream the shortening and gradually add sugars. Add eggs and beat until light and fluffy. Add flour mixture and blend well. Mix in rest of ingredients. Dough will be crumbly. Drop by teaspoonfuls on a greased cookie sheet. Bake 9 min. at 350º.

This is one of the best cookie recipes I have; however, it does not have a good shelf life. I typically make the dough, then just bake the cookies when needed. We can make the dough stretch for about 3 days!
