1 T. butter
8 oz. scallops
1 T. olive oil
Scant cup of oyster mushrooms
Scant cup of shitake mushrooms
1 garlic clove, chopped
1 c. scallions or green onions
3 T. heavy cream
1 T. brandy
Salt and pepper
Freshly cooked rice or Orzo pasta

Heat the butter in heavy bottom skillet and sauté the scallops for about 1 minute, turning occasionally. Remove the scallops from the skillet with a slotted spoon and keep warm. Add oil to the skillet. Add the mushrooms, garlic, scallions and cook for 2 minutes, stirring constantly. Return scallops to the skillet. Add heavy cream and brandy stirring well to mix. Season to taste with salt and pepper.
