4 small yellow squash or zucchini
3-4 T. butter, at room temperature
1 green onion, chopped
1/8 tsp. Cajun seasoning, or to taste
1 clove garlic, minced
1/3 c. grated Parmesan cheese

Directions:
Directions:
Preheat oven on broil or 550ºF. In small bowl, combine butter, green onion, Cajun seasoning and garlic. Stir to blend and set aside. Wash squash or zucchini, dry and cut off ends. Cut squash in half lengthwise. If the squash is big, slice horizontally into thirds. Using a fork, draw grooves down length of cut surface, not too deep. Spread some of the seasoned butter over the top of each squash or zucchini half (or slices). Sprinkle tops with Parmesan cheese and place in baking pan. Place under broiler and watch carefully until cheese is browned. Serve hot.
