1 lg. Russet Potato
1 lg. Sweet Potato
1/4 lg. White Onion
1 lg. Egg, room temperature
2 tbsp. Flour
1 tsp. Kosher Salt
1/4 - 1/2 tsp. Black Pepper
Vegetable Oil for frying

Directions:
Directions:
Grate potatoes and onion using the lag. holes of a box grater. Set potatoes in a colander and allow potatoes to release their moisture for about 30 minutes. Squeeze out remaining water. Combine drained potatoes in a lg. bowl with remaining ingredients.

Place about 1 inch of oil in a frying pan and heat until almost smoking. Spoon about 1 tbsp. of mixture per latke into oil turning once golden brown. Approx. 1-2 minutes per side. Transfer to a paper towel to drain. Serve hot!
