Ingredients: Macaroon Nut Crust
5 oz. almond macaroons – about 1 1/2 C. or 1 package of Italian almond cookies (Musso brand is good) 2 – 3 Tbsp. melted butter or margarine, as needed 1/2 C. chopped pecans or walnuts
Filling
2 egg whites at room temp. 1 C. sugar 2 C. sliced strawberries 1 Tbsp. lemon juice 1 tsp. vanilla
Sauce/ Garnish
Package of sweetened frozen strawberries or whole berries

Directions:Macaroon Nut Crust
In food processor with metal blade, process cookies and butter until coarsely ground. Add nuts and process until mixture holds together. Press into bottom (sides are optional) of 10 x 3 in. spring form bake pan. Bake at 350° for 7 - 10 min.
Filling
In large bowl place egg whites, sugar, berries, lemon juice and vanilla. Mix with electric blender on low to blend. Increase to high speed until firm peaks hold – about 10 –15 min. Pour into cooled crust. Cover and freeze until firm – about 6 hrs. Can be frozen up to 3 weeks. Serve directly from freezer.
Sauce/ Garnish
Puree a package of sweetened frozen strawberries – drizzle on top of slices or bowls before serving. Or garnish with whole berries. |

For a really EASY dessert, this can also be made without the crust - freeze the filling in a large bowl and serve in small bowls.
