1 lb of chicken breasts or tenders, cooked and diced
3 cans chicken broth (or broth from cooking the chicken)
1 onion, chopped
2 cloves garlic, minced
1 can Ro*Tel tomatoes, mild
1 can shoepeg corn
2 cans chopped green chilies
1 can sliced black olives
1 can Great Northern beans
2 tsp salt
1 T chili powder
1/2 T cumin
1 tsp pepper
Juice of 1/2 a lemon

Directions:
Directions:
Cook onion and garlic in the chicken broth until tender. Add the cooked chicken and remaining ingredients. Simmer on low for 30 minutes.

Serve with tortilla chips, grated cheese, sour cream, and green onions.
