3 sticks butter
3c. sugar
6 eggs
3c. flour
1/4tsp. baking soda
1/4tsp. salt
8oz. sour cream
1tsp. vanilla
1 1/2c. fresh grated coconut

Icing
1 box confectioners sugar
1 stick butter melted
1tsp. vanilla
2tsp. coconut milk
8oz. cream cheese
2c. fresh grated coconut
Directions:
Directions:
Cream together butter and sugar. Add eggs one at a time, beating well after each addition. Mix flour, soda, and salt. Add to creamed mixture. Stir in sour cream, vanilla, and coconut. Turn into a greased and floured 10 inch tube pan. Bake in a 300º oven for 1 hour and 45 minutes. Cool in pan 30 minutes. Remove from pan to finish cooling. For icing, mix together sugar, butter, vanilla, coconut milk, and cream cheese. Ice cake. Sprinkle and press fresh coconut into the icing until completely covered. Keep refrigerated. Freezes well.
