Corn Relish Recipe

4 c corn kernels (about 9 ears)
1 c diced green pepper
1 c diced red pepper
1 c chopped celery
1/2 c chopped onion
1 1/2 c vinegar
3/4 c sugar
2 tsp salt
1 1/2 tsp dry mustard
1 tsp celery seed
1/4 tsp tabasco sauce
1/2 tsp turmeric
2 T flour

Prepare corn by boiling husked ears 5 minutes. In an enamel or stainless steel kettle combine peppers, celery, onion, vinegar, sugar, salt, celery seed and Tabasco. Boil 5 minutes stirring occasionally. Dip out 1/2 c hot liquid. Mix it with dry mustard and turmeric and return to kettle. Add the corn. Add flour mixed in 1/4 c cold water. Boil for 5 minutes. Fill pint jars. Process 15 minutes.
