10 to 12 tamales
1 medium onion chopped
1 small green pepper chopped
1 small jar pimiento chopped
1 tablespoon butter melted
2 cups fresh or frozen corn
1 1/2 cups grated cheese

Directions:
Directions:
Steam tamales and reserve juice. Lightly sauté onion, pepper, and pimento in butter and simmer briefly in 4 tablespoons tamale juice.
Remove tamale husks. Cut tamales into small pieces. Toss vegetable mixture with corn. Salt and pepper to taste. Fold in tamales and bake in 1 1/2 quart casserole dish at 350 degrees for 1 hour. Remove from oven top with grated cheese till cheese melts.
