2 tbsp cider (or rice) vinegar
2 tbsp olive oil
1 can black eyed peas (15 oz)
1 package frozen corn (10 oz)
1 red bell pepper, diced
2 scallions, chopped
salt and pepper

wisk mustard, vinegar, and oil in bowl, add peas and corn and salt and pepper to taste.
