1/2 Cup diced yellow onion
1 T buter
1 Cup whole or 2% milk
1/2 Cup heavy cream
1 Pkg (5.2oz) Boursin Cheese
1 - 10oz Pkg frozen, chopped spinach, thawed, drained and squeezed
2 T lemon zest
salt, black and cayenne pepper to taste
Non-stick spray
TOPPING:
2/3 Cup course, fresh bread crumbs
1 T unsalted butter, melted
1 T olive oil
salt and pepper to taste

Pre-heat oven to 425º
Coat shallow 2 cup baking dish with nonstick spray

Saute onion in butter over mediumheat until onion is soft...about 5 minutes.

Add flour. Stir to coat onions and cook about 1 minute.

Gradually whisk milk and heavy cream into onion mixture, stirring constantly to prevent lumps.

Simmer sauce about 1 minute.

Stir in boursin cheese a little at a time until melted and smooth. Remove from heat.

Add spinach, parmesean cheese, lemon zest, and seasonings. Transfer to baking dish.

Combine bread crumbs, butter, oil and seasonings.
Top spinach with bread crumbs, packing them to adhere.

Place dish on large baking sheet.
bake until crumbs are golden and sauce is bubbly. Bake about 20-25 minutes.
