Ingredients: 1 lb. unpeeled fresh shrimp, 1 (12 oz.) package fettuccine (or desired pasta), 1/2 lb. chopped smoked sausage, 1/2 c. butter or margarine, 1 chopped medium onion, 1 chopped small green bell pepper, 4 minced garlic cloves, 1 can Rotel, Cajun Seasoning, 1/2 to 1 tsp. Crab Boil, 3 T. all-purpose flour, 2 c. chicken broth, 1 c. half and half, 1/2 c. heavy cream, 6 oz. cubed Velveta block cheese, 3/4 c. chopped green onions, 1/3 c. grated parmesan cheese, 3 T. chopped parsley.

Directions:Peel shrimp, and devein, if desired. Set aside. Prepare fettuccine according to package directions. Drain, and set aside. Cook sausage in large dutch oven over medium heat until browned; remove sausage and set aside. Melt butter in drippings in medium heat. Add shrimp, cook until pink. Remove, and keep warm. Add onion and next three ingredients; cook, stirring constantly, over medium heat 10 minutes or so. Stir in flour, crab boil, and season to taste. Cook for one minute, while stirring. Gradually add chicken broth; bring to a boil, stirring occasionally. Boil for one minute. Reduce heat to medium-low, and add half and half and cream; cook until mixture simmers. Add Velveta, sausage, and shrimp, stirring until cheese melts. Stir in chopped green onions, parmesan cheese, and chopped fresh parsley. Serve over hot pasta. Enjoy! |
