9 Lasagna noodles
10 large white potatoes
16 oz. Velveta Cheese
Milk
1 Med. onion, chopped
1-1/2 C. butter, divided

Directions:
Directions:
Cook noodles in boiling salted water and drain. Peel and cook potatoes and mash with 1/2 C. butter, a little milk. Add Velvetta cheese and mix well. Mixture should be fairly thick.

Saute onion and 1 cup butter till onion is soft. Cover bottom of 9x13 pan with 1/2 of butter and onion mixture. Make layers of noodles and spread potatoe mixture on top of noodles and continue layering until noodles and potatoes are used up, ending with potatoes. Pour remaining onion and butter over top and bake uncovered at 350 for 25 mins.

Pieogies were well loved in our family. There are recipes for real pierogies in this book as well. These are quite good, however, and great to take to a pot luck.
