3 medium zucchini (diced) 4 cups
1 lg. onion, diced
1/2 cup celery (optional)
1/4 cup diced green pepper
1/2 tsp. basil leaves
1/4 tsp. salt
1/4 tsp. lemon pepper
1 pt. tomatoes
3/4 cup fine bread crumbs
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese
3 tbsp. cooking oil

Directions:
Directions:
Saute vegetables in oil. Add basil, salt, lemon pepper and tomatoes. Cook covered 10 minutes. Layer cooked ingredients with bread crumbs and mozzarella cheese in buttered baking dish. Top with parmesan cheese. Bake in 350º oven for 25 minutes.
