2 boxes frozen spinach
2 boxes frozen collard greens
2 boxes frozen mustard greens
3 tbsp. vegetable oil
1/2 lb. Pickled meat or mild smoked sausage or bacon
3/4 cup chopped onions
2 cups liquid from steamed greens
2 minced garlic toes
1 cup water
3 tbsp. flour


Directions:
Directions:
Steam greens in water till tender. Drain liquid, reserving. Chop greens. Make a roux adding onions and garlic. Add meats, (fried bacon, smoked sausage or pickled meat) to greens. Season to taste. Cover and cook slowly for 1 hour. Delicious served over warmed rice.
