Ingredients: 2 - 3 cups strong, cold espresso coffee 32 Italian ladyfingers (best to use Savoiardi brand if possible - best to use non-soft ladyfingers if possible) 10 egg yolks 10 T. sugar 1 pound mascarpone cheese (can use substitute -- see below) 1 to 2 T. Marsala wine 2 C. heavy cream 3 T unsweetened cocoa powder

Directions:Pour the cold coffee into a large pie plate, dip 16 of the ladyfingers very briefly into the coffee and line the bottom of a 9 x 12 glass dish with ladyfingers. Combine the egg yolks and sugar in top of double boiler; beat until thick and lemon colored. Bring water to boil, reduce heat to low and cook 8 - 12 mins., stirring constantly. Remove from heat. Add mascarpone cheese (substitute 2 eight oz. pkgs. cream cheese mixed with 1/2 C sour cream and 2 T. whipping cream for mascarpone cheese). Whip whipping cream until stiff and fold into egg-cheese mixture. Add the marsala wine to egg-cheese mixture until well-blended and smooth. Spread 1/2 of the mixture over the ladyfingers and dip the remaining ladyfingers in the coffee, arrange layer over cheese mixture and spread remaining mixture over top. Chill at least 6 hours -- you can put a layer of whipped cream on top if you like and then dust with unsweetened cocoa powder and chocolate curls if desired. |
