2 to 21/2 lbs. fresh or frozen shrimp
1/2 c. celery tops
1/4 c. mixed pickling spices
1 tbsp. salt
2 c. sliced onions
7-8 bay leaves
11/2 c. salad oil
3/4 c. white vinegar
3 tbsp. capers with juice
21/2 tsp. celery seed
11/2 tsp. salt
drops of bottled hot pepper sauce to taste

Directions:
Cover shrimp with boiling water; add celery tops, pickling spices, and salt. Cover and simmer 5 minutes. Drain; peel and devein under cold water. (I sometimes use frozen shrimp that are all shelled and deveined.)
Layer shrimp, onion and bay leaves in a shallow casserole. Combine remaining ingredients. Pour over shrimp. Cover; chill at least 24 hrs. spooning marinade over shrimp occasionally.
