1 pkg. (3-3/4 oz.) instant pistachio pudding
1 Can (16 oz.) crushed pineapple
1 container (9-1/2 oz.) Cool Whip
1 C. minature marshmallows
1/2 C. chopped nuts (optional)

Directions:
Directions:
Mix dry pudding with undrained pineapple. Fold in cool whip and marshmallows. Let set overnight in refrigerator before serving. Note: May also add chopped pecans and maraschino cherries (pretty at Christmas).

We had this at Christmas as a salad, but certainly is also good as a salad, or even as dessert, during less formal dinners.
