4T. unsalted butter, divided
1/3c. finely chopped shallots
1/2c. finely diced dried apricots
2T. finely diced dates
2T. golden raisins
1/2tsp. cumin
1/2tsp. curry powder
1/16tsp. cayenne pepper
3c. chicken stock
2c. couscous
1/2 tsp. chili oil(optional)
Kosher salt
1 1/2T. chopped parsley

Directions:

Heat 3T. butter in medium heavy saucepan(with lid)over medium heat until melted and hot. Add the shallots and cook, stirring, until softened, about 1-2 minutes. Add the apricots, dates, raisins, cumin, curry powder, and cayenne. Stir to mix. Remove from heat and set aside. Heat stock in another sauce pan to a boil, then pour it over the shallot-fruit mixture. Stir in the couscous, and cover pan with lid. Let stand for 5 minutes. Uncover pan and stir in the chili oil if desired.(this will make it spicy) Stir in remaining butter. Season with salt. To serve, mound couscous in a serving bowl and sprinkle with parsley. Serve warm.
