1 c. confectioner's sugar
1 egg white
½ tsp. cream of tartar

Beat sugar & egg. Add more sugar if necessary to hold firm peaks. The mixture should flow easily when put in paper cones. Just before taking from the mixer, add cream of tartar and beat again. The frosting gets hard and glossy quickly and isn't apt to crack. It can be made ahead and kept in tightly fitted jars and in the refrigerator several days if not exposed to air.

Other tips for cookie decorating. To secure candy decorations use a dot or Karo syrup as "glue". Use small paint brushes to brush some Karo syrup over cookie and dip into colored sugar crystals.
