1 pkg. active dry yeast
¼ c. warm water
1½ c. hot water
1/3 brown sugar
2 tsp. salt
3 T. shortening
2 c. stirred whole wheat flour
3 to 3 1/4 c. sifted all-purpose flour

Directions:
Soften yeast in ¼ c. warm water (110º). Combine hot water, sugar, salt and shortening; cool to lukewarm. Stir in whole wheat flour and 1 c. of white flour; beat well. Stir in yeast. Add enough of remaining flour to make a moderately stiff dough. Turn out on lightly floured board and knead till smooth and satiny (about 10 to 12 min). Shape dough in a ball; place in lightly greased bowl turning once to grease surface. Cover; let rise in warm place till double (about 1½ hrs.). Punch down. cut into two portions; shape each in smooth ball. Cover and let rest 10 minutes.

Shape in loaves; place in greased 8½ x 4½ x 2½ loaf dishes. Let rise till double (about 1¼ hrs.). Bake in moderate oven (375º) about 45 minutes. Cover loosely with foil last 20 minutes if loaves brown too quickly. Makes 2 loaves.
