1½ c. long grain white rice
¼ tsp. salt
½ of a 10 oz. pkg. frozen peas & carrots
1 pkg. Lipton Onion Soup mix
½ stick of margarine

Directions:
Directions:
Have on hand a ring mold which holds 3½ cups. Put rice and salt into saucepan with 3 cups water. Bring to a boil, cover with lid and reduce heat to medium low and continue to slow cook for 10 minutes before adding the onion soup mix. Replace lid and cook another 10 minutes. At this time cook peas and carrots in the microwave until just tender (or can use leftover peas and carrots from last night's dinner). Fold with margarine pats into rice. Spoon into ring mold. Invert onto plate and remove mold.
