Pare 2 medium potatoes per person & cut into 3/4 inch thick pieces
Couple pinches of salt
Couple dashes of pepper
Margarine - 2 T. per person
Whole milk

Directions:
In medium saucepan place potato pieces in just enough water to cover pieces. Add salt. Bring to a slow boil on high and reduce heat to med-low, just enough to slow boil. Cook 20 minutes or till fork tender. The trick to perfect potatoes is to mix them as soon as you take the pan off the stove. Have ready mixer and milk and margarine. Drain water from potatoes and add the margarine and milk and begin mixing, increasing speed of mixer as you are able. Thin the mixture as necessary with more milk. Mix for at least 3 minutes on high. Add a couple pinches of salt and a few dashes of pepper. Serve immediately.
