1 c. uncooked rice
1/2 to 1 lb. thin sliced, rare roast beef
4 large mushrooms
6 - 5" pieces of celery
1/4 lb. fresh spinach or 1 - 10 oz. frozen pkg.
4 scallions
2 medium onions
3 Tbsp. salad oil
10½ oz. can consomme
1 or 2 Tbsp. sugar
4 Tbsp. soy sauce

Cook rice according to pkg. instructions. Put skillet on medium heat. Peel onion and mushrooms. Slice. In colander wash spinach, scallions, and celery. Turn onto paper towels to drain. If using frozen spinach pat dry. Quickly slice spinach into one inch pieces. Slice celery & scallions into thin slices. Add salad oil, onion, mushroom and roast beef to skillet. Saute lightly. Add consomme, sugar and soy sauce. Stir. Bring to quick boil. Add celery and spinach. Cook for 2 minutes, stir again. Serve hot over the rice.
