2 whole, boneless, skinless chicken breasts, halved
¼ tsp. Thyme
¼ tsp. salt
1/8 tsp. pepper
¼ c. finely chopped shallots
2 Tbsp. butter
2 c. navel oranges - peeled and sectioned

Directions:
Directions:
Place chicken breasts between 2 sheets of dampened wax paper. Pound to ¼" thickness with rolling pin or flat side of meat mallet. Sprinkle with thyme, salt and pepper. Saute chicken and shallots in butter in a large, non-stick skillet until chicken is brown (2 to 3 minutes on each side). Add orange sections. Cook, turning chicken breasts for 1 to 2 minutes more, or until juices are at desired consistency. Serve with steamed broccoli florets and tossed salad.
