8 Chicken thighs (2½ lbs.)
1 tsp. salt
¼ tsp. pepper
½ c. apricot jam
2 Tbsp. bottled chili sauce (optional)
1 Tbsp. Dijon style mustard
Cooked rice

Directions:
Directions:
Preheat oven to 375. Pat chicken dry. Sprinkle with salt and pepper. Place chicken (skin side up) in a 13x9x2" baking dish. Combine apricot jam, chili sauce (optional) and mustard in a small bowl. Force mixture through small strainer with back of spoon. Bake in pre-heated oven for 25 minutes. Brush skin side of chicken with ½ of the apricot glaze. Bake 20 minutes more until tender, brushing with remaining glaze
