4 c water
6 potatoes pared & diced
1 onion chopped
2 stalks celery chopped
2 carrots sliced
2 T butter
1 tsp salt
l/4 tsp pepper
3 c milk
1/2 c sour cream or more

Boil potatoes & carrots until tender. Strain, reserving 1 c water.
In sauce pan saute onions & celery in butter until tender.
Add potato water & remaining ingredients except sour cream & simmer 30 minutes.
Add sour cream & mix well.
Serve hot & sprinkle with paprika.
May also garnish with bacon bits, green onions, shredded cheese, or what have you
