2 sliced onions
butter or oil
1 T. curry powder
water
1 bay leaf
Grated rind of 1 lemon
1 lb. cooked lobster meat
3.4 C. ground coconut
2 tsp. sugar
Juice of 1/4 lemon

Directions:
Directions:
Fry onion in butter or oil. Add curry powder mixed with water to a
paste. Cook 5 minutes. Add bay leaf, lemon rind and lobster.
Remove from the fire and stir occasionally. Add coconut and
sugar and heat until bubbly hot. Remove bay leaf. Add lemon
juice. Stir and serve.
