1 (3 oz.) pkge. cream cheese
1 cup mayonnaise
1½ tsp. grated onion
2/3 cup grated parmesan cheese, halved (reserving ⅓ cup for topping)
1/8 tsp cayenne pepper
1 baguette, thinly sliced
paprika
1/2 lb. shrimp, shelled & deveined, cooked then coarsely chopped (optional)

Directions:

Preheat oven to 300º.
Mix first 5 ingredients. Add shrimp, if using. Set aside.
Cut baguette, thinly sliced and place on cookie sheet.
Bake at 300º for 5 minutes to toast
Generously spread cheese mixture on rounds and sprinkle with a pinch of reserved parmesan cheese and a dash of paprika or Old Bay, if using shrimp.

Broil until puffy and golden. Serve hot. Makes approx. 30 toasts.

I can't remember when I tried this recipe, but I had some fresh shrimp and added it, and well.....OMG. Give it a try. The original recipe is from Tidewater, but I made some changes. I did have Shrimp Toast appetizer at Elijah’s Restaurant in downtown Wilmington, NC, I may have been going for that.
