1 Tbsp. water
1-1/2 cups egg whites (about 12)
2 cups granulated sugar
1/3 cup cocoa
1 cup cake flour
1/2 tsp,. salt
1 tsp. cream of tartar
1 tsp. vanilla

Directions:
Directions:
1-Add water to the egg whites and let stand until they become room temperature.
2 - Sift sugar & cocoa together until well blended.
3 - Sift flour with salt.
4 - Beat egg whites until foamy, add cream of tartar & continure beating until mixture holds a peak.
5 - Continue beating while slowly adding the sugar and cocoa until stiff.
6 - Fold in the flour and add the vanilla.
7 - Bake in tube pan in 375º oven about 40 minutes.
