Pastry for 9-inch, 2 crust pie (I often use the Pilsbury All Ready from the diary section at the grocery)
3/4 C. sugar
1 Tablespoon cornstarch
1 teaspoon allspice or cinnamon
1/4 teaspoon nutmeg (opt)
2 pounds tart, baking apples, peeled, cored, sliced (6 Cups)
1 Tablespoon lemon juice (opt)

Directions:
Directions:
Preheat oven to 425º. Line bottom of pie plate with pastry.
In large bowl combine sugar, cornstarch and spices.
Toss apples in lemon juice (if desired for color preservation) and add to dry mixture. Toss to coat.
Spoon into crust. Dot with butter (opt).
Cover loosely with top crust. Fold edges under and flute. Cut several 1/4" wide steam vents with small, sharp knife.
Cover edges with pie crust shield and bake 45-50 mins. or til fruit is tender and juices bubble up clear and shiny.
Cool on wire rack.
Enjoy at room temp or melt cheddar cheese on top while heating, or heat and serve with vanilla ice cream on top!
