1 crust from box (14.1 oz) refrigerated Pillsbury™pie crust, softened, as directed on box
1 (10 oz) pkg. frozen chopped spinach
4 eggs, beaten
3/4 cup cream
1¼ cups milk
salt and pepper to taste
2 tablespoons lemon juice
2 tablespoons fresh parsley, chopped
1/4 pound feta cheese, crumbled
3 tablespoons fresh grated parmesan or romano cheese

Heat oven to 375°. Place crust in an ungreased 9” pie dish. Press crust firmly against side and bottom. fold excess crust under and pressed together to form thick crust edge; flute. Prick bottom and sides of crust with fork. Bake 9 to 10 minutes until lightly browned.
Thaw spinach and squeeze out moisture, it needs to be very dry.
Mix eggs, cream and milk, add salt, pepper, lemon and parsley.
Stir in spinach and feta.
Fill crust and place the parmesan cheese on top.
Bake for 30 to 35 minutes, or until knife inserted in center comes out clean; if needed, cover edge of crust with foil during last 5 to 10 minutes of baking to prevent excessive browning. Cool 10 minutes before serving. Cut in wedges. Serves 8.

I have had this recipe since we lived on Glenwild Road in Maryland. Be sure to totally squeeze out the moisture from the spinach or you will have a soggy mess. Enjoy!
