Lemon Blossoms

1 - 18 box of yellow cake mix
1 - 3 instant lemon pudding
4 eggs
cup vegetable oil


4 cups powdered sugar
1/3 cup fresh lemon juice
1 lemon zest grated
3 tablespoon vegetable oil

Mix ingredients together and pour into mini muffin pans
Bake at 350F for 12 minutes and let set for 5 minutes in pans before removing.

Make glaze and dip each blossom in glaze and let set thoroughly.

Makes about 60 Blossoms

You may have to make another batch of glaze.
