1 cup whipping cream
1 lb light brown sugar
2 cups pecans
2 tbl margarine
1 tsp real vanilla extract

mix cream & sugar together in a 4 qt microwave bowl. microwave on high for 10min stirring sides of bowl twice. stir in pecans & margarine, return to microwave for 2 min. add vanilla, microwave 1min. drop small amount in cold water for softball, beat until creamy & starts to thicken. drop with teaspoon onto large foil sheet. candy thermometer 235F to test.
