1 medium size eggplant or cauliflower
2 medium onions
1 1/2 c. rice
1 lb stewing beef

Directions:
Slice eggplant in 1/2 inch slices and brown in fat. Slice onions and brown. In a heavy saucepan brown and cook meat until tender (the saucepan should be deep enough to hold all ingredients.) When meat is tender, cover with browned onions. Add the eggplant. Cover the eggplant with the uncooked rice. Add salt and 2 c. boiling water. Cook very, very slowly (simmer), until rice is tender. Add water as needed so that meat does not burn. When rice is tender, remove from fire and let stand a few minutes. This should be turned out on a large plate. It should be moist enough to loosen from pan and firm enough to hold the shape of the pan. Serve with tossed salad.
