Flaming Crepes Recipe

Ingredients: 2 C flour 3 C milk 4 eggs 2 Tbsp butter 1 spoonful of vanilla sugar* A splash of Grand Marnier, or any high-alcohol liquor

Directions:Measure flour into a large mixing bowl. Stir in vanilla sugar. In a separate bowl mix milk and eggs. Make a well in the flour and add the liquid mixture a small amount at a time. Use a whisk to stir after each addition, increasing the size of the well until entire batter has been whisked lump-free. Mix in butter. Let sit for 30 minutes to 2 hours.
Pour thin layer of batter in a small frying pan over medium heat. Cook for ~1 min, then flip. Optional: Pour a small measure of liquor into the pan and quickly light with a kitchen torch.
Serve with vanilla sugar sprinkled on top. Other great toppings are nutella, whipped cream, jam or maple syrup.
*To make vanilla sugar, store whole vanilla beans in an airtight container with a 5 lb bag of sugar. Regular sugar works as a substitute. |

Notes: The Lee, Stewart and Weyerer families were introduced to crepes in the street of Paris in 2005. The tradition of homemade crepes was born on Thanksgiving as a contribution to the meal from French interns working with Marc, and he was so excited by the flames that he carried the recipe back to Westfork for Christmas. Warning: Sweater Fuzzies may ignite! Just ask Ann.
