1lb heavy cream, 12oz semi sweet chioc, 4 oz yolks, 9 oz
granulated sugar, 5 0z egg white, 2 oz brandy or rum.

whip heavy cream. melt choc. heat with half of sugar and whip
together. whip egg whites with other half of sugar. fold choc into
yolk. add flavouring (brandy or rum). add cream then meringue
mixture.
