2 1/2 - 3 c flour
1 large egg - beaten
1/2 c water

Directions:

In a large bowl stir together egg, water & flour. Salt to taste.

Knead until it forms a soft dough. Halve it and put half in a bowl covered with a kitchen towel.

On a lightly flowered surface, rool out the dough so its thin (not too thin). Take a juice glass, dip mouth in flour & cut out circles. Roll out slightly & fill with potato or sauerkraut filling. Fold dough and crimp edges to seal together.

Bring large pot of water to boil. Salt. Drop pierogi into boiling water & return to a boil. Continue boiling for 15 minutes.

Remove and gently place in collander.

Serve immediately or after a quick saute in oil. Serve with browned onions.
