RICOTTA PIE FILLING

½ C GRANULATED SUGAR
2 TBSPS CORNSTARCH
1/8 TSP GROUND CINNAMON
1 CONTAINER (15OZ) RICOTTA GHEESE
2 LARGE EGG WHITES (I USED 2 WHOLE EGGS)
1 TSP VANILLA EXTRACT.

HEAT OVEN TO 375

COMBINE SUGAR, CORNSTARCH,CINNAMON IN A LARGE BOWL. STIR INT RICOTTA , EGG WHITES AND VANILLA. POUR INTO PREPARED 9 INCH PIESHELL AND BAKE 45 TO 50 MINUTES, UNTIL FILLING IS JUST SET IN THE CENTER.


COOL ON WIRE RACK. CAN BE SERVED ROOM TEMP OR COLD. OPTIONAL: SERVE WITH RASPBERRIES OR STRAWBERRIES.

Use deep dish 9 inch pie shell, crust can be anything you like, regular pie shell or cookie crust made with vanilla wafers.

I experimented with this and added cream cheese,
make these changes 3/4 c sugar, 3 tbsp corn starch,1/4 tsp cinnamon, 15 oz Ricotta, 8 oz cream cheese, 3 eggs, 1 1/2 tsp vanilla. Bake @ 375 degrees for 55 minutes. Came out great, try it you'll like it, maybe I'll patent this.
