FRESH APPLE POUND CAKE

1 1/4 C OIL
2 C SUGAR
3 EGGS
2 TSP VANILLA
3 C. ALL PURPOSE FLOUR
1 TSP BAKING SODA
1 TSP SALT
3/4 TSP CINNAMON
1 C CHOPPED PECANS
3 APPLES, PEELED AND DICED

Directions:
Combine oil, sugar and eggs. Beat @ med speed for 3 minutes. Add vanilla. Combine dry ingredients. Add to egg mixture. Batter will be thick and stiff.

Fold in chopped pecans and apples. Grease and sugar or flour a tube pan. Bake @ 325 degrees for 70-80 minutes.

Cool in pan for at least 15 minutes. This is important, cake will fall apart if inverting pan too soon.
