BANANA PINEAPPLE CAKE

3 cups all purpose flour
2 cups sugar
1 tsp salt
1 tsp baking soda
3 eggs slightly beaten
2 cups mashed bananas (about 3)
1 cup cooking oil
1 can crushed pineapple (8oz)
1 ½ tsp vanilla
optional 1 cup crushed nuts

1 tbsp powdered sugar

In mixing bowl , thoroughly stir together flour, sugar, salt and baking soda. Stir in nuts if desired. Make a well in center of dry ingredients.

Combine eggs, bananas, oil, undrained pineapple and vanilla; add all at once to dry ingredients, stirring well until moistened.

Pour batter into greased,floured (I used spray with flour included)10 inch fluted bundt pan. ( I used a tube pan, easier to remove) Bake at 350 degree oven for 65 to 75 minutes (do not overbake I did 65 minutes in tube pan) until cake tests done with toothpick. Cool in pan 15 minutes; remove from pan and cool on wire rack. Sprinkle with powder sugar or drizzle with powdered sugar glaze. (makes 16 slices)
