Coconut Pie Recipe

1/3 c. flour
2/3 c. sugar
1/4 tsp. salt
2 c. milk, scalded
3 slightly beaten egg yolks
2 Tbsp. butter or margarine
1/2 tsp. vanilla
1 1/2 c. coconut
1 baked 9 inch pastry shell
3 still beaten egg whites
6 Tbsp. sugar

Mix flour, sugar and salt. Gradually add milk. Cook over moderate heat, stirring constantly until mixture thickens and boils. Cook 2 minutes and remove from heat. Add small anount to egg yolks. Stir into remaining hot mixture. Cook 1 minutes, stirrring constantly. Add butter, vanilla and 1 cup of coconut. Cool slightly. Pour into baked pastry shell. Cool. Cover with meringue and sugar. Sprinkle 1/2 cup of coconut over meringue. Bake in 350 oven for 12-15 minutes.
