double crusts for 9" pie pan
1/3 C margarine or butter
1/3 C chopped onion
13 C all-purpose flour
1/2 t salt
1/4 t pepper
1 1/2 C chicken broth
2/3 C milk
2 1/2 - 3 C shredded cooked chicken or turkey
2 C frozen mixed vegetables, thawed (nuked covered for one 1.11 mins)

Heat oven to 425º F. Line 9" round pan with bottom crust. Melt margarine or butter in med saucepan over med heat. Add onion, cook 2 mins or til tender. Add flour, salt and pepper; stir in broth and milk, cooking and stirring til bubbly and thickened.
Add chicken and mixed vegetables; mix well. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edges and flute. Cut slits in several places in top crust.
Bake at 425º F for 30-40 minutes or til crust is golden brown. Let stand 5 mins before serving.
