Bread Machine Focaccia Recipe

3 cups bread flour
½ teaspoon salt
½ teaspoon sugar
1 cup + 2 tablespoons water (105º-115º F)
1 tablespoon olive oil
2 ¼ teaspoons active dry yeast
2 tablespoons extra virgin olive oil (+ or -)
1 teaspoon coarse salt; Kosher or sea salt (+ or -)
fresh cracked pepper to taste
cayenne pepper or any seasoning you may fancy (opt.)

Place first 6 ingredients in bread machine pan in the order listed above. Reserve remaining ingredients for topping later.

NOTE: If you wish to use the delay timer so that dough is kneaded later put all liquid ingredients into the bread pan first and add all dry ingredients next, piling them into a high mound with the yeast in an indentation made into the top of the mound. This will keep the yeast well away from the moisture until the actual mixing process begins. If yeast proofs too soon, it will be ‘dead’ by the time the machine begins the mixing process.

After machine is done with dough, remove dough and let rest 5 minutes. Sprinkle hands with flour; with fingertips spread dough evenly into 13” x 9”x 1” pan (lightly oiled). Cover with clean kitchen cloth. Let rise til doubled in height (30-60 minutes).

Preheat oven to 400º F. Make light indentations with fingertips in the surface of risen dough. Brush with extra virgin olive oil and sprinkle with coarse salt, black fresh ground pepper and any other seasoning you’d like to use. Bake on bottom rack of oven for approximately 30-35 minutes or til golden brown.

Let cool in pan, if desired, or slide onto cutting board and cut with pizza cutter into 12 equal pieces.

This bread makes a wonderful pizza, too. After shaping in the pan just spread some olive oil on the edges with a pastry brush. Then spread with pizza sauce to within 1" of the edge and apply the pizza ingredients of your choice.
