1/2 C. OIL
2 EGGS
1 1/2 C. FLOUR
1 TSP. SODA
1/2 TSP. SALT
1 TSP. VANILLA
1 C. CARROTS, GRATED
1/2 C. NUTS, CHOPPED
3/4 TSP. CINNAMON

MIX SUGAR, OIL, & EGGS TOGETHER. SIFT TOGETHER FLOUR, SODA, & SALT; ADD TO MIXTURE. ADD VANILLA, CARROTS, NUTS, AND CINNAMON. MIX WELL. BAKE IN LOAF PAN AT 350º FOR 1 HOUR. COOL 10 MINUTES BEFORE REMOVING FROM PAN. I PUT IN MUFFIN TINS & SPRINKLE PECANS ON TOP- BAKE.
