2 Cans Chicken Broth
1 Head Escarole Leaves separated and washed
3 Potatoes Pealed & Diced into bite size pieces
1/2 Cup White Wine
1 Onion Sliced
3 Cloves Garlic Chopped
1/4 Cup Olive Oil
Salt, Pepper & Basil (to taste)

Directions:
Directions:
Sauté Onion & Garlic in oil.
Add Chicken Broth, Wine & Spices bring to boil.
Lower heat add Potatoes cook 10 min.
Break up Escarole & put into pot.
Cook 20 min.
