1 package yellow cake mix
1 package instant vanilla or coconut cake mix (note: if cake mix already had pudding in it, omit this)
1 can (15 oz.) cream of coconut
1/2 c. + 1 tbsp. rum
1/3 c. vegetable oil
4 eggs
1 can (8 oz) of crushed pineapple

Preheat oven to 350º

In a large mixing bowl combine cake mix, pudding mix (if using), 1/2 cup cream of coconut 1/2 cup rum, oil and eggs..

Beat on medium speed for 2 minutes

Stir in pineapple

Pour into well greased bundt or similar type pan

Bake for approximately 50 minutes

Cool slightly and remove from pan

With a knife or skewer poke holes into cake, roughly 1 inch apart almost to the bottom.

Combine remaining crream of coconut with rum and pour over cake.

Chill thoroughly and serve
