2 sheets of prepared pie crust
5 -7 medium tomatoes sliced
2 T. of extra virgin olive oil
2 garlic cloves chopped
1 tsp. of Italian seasoning
1 tsp. of basil leaves (fresh or dried)
dash of salt, pepper, & onion powder
6 oz of shredded cheese (total)
(Parmesan, Romano, Asiago, & Mozzarella mix)

Grease Pie Pan. Place 1 sheet of prepared pie crust into pie pan. Place 1st layer of sliced tomatoes onto crust. Mix chopped garlic with olive oil and drizzle 1/2 onto 1st layer of tomatoes. Sprinkle 1/2 of the herbs onto tomatoes. Place 1/2 of the cheese mixture onto tomatoes. Make a 2nd layer of tomatoes and repeat ending with cheese mixture. Lay the remaining pie crust flat and cut into strips. Create a lattice for the top of the pie.
Bake at 350 degrees 30 - 45 min until golden.
Note: check pie while baking to see if you need to drain some liquid to prevent sogginess (To prevent sogginess try precutting the tomatoes and patting them between paper towels to soak up excess liquid before baking).

This is a great recipe for picky eaters. It tastes a little like a fancy marinated pizza. You can use part skim lower fat cheeses and it still turns out great. We usually drain some liquid from the pie before serving. The fresh tomatoes make a lot of liquid. (Note: We made this last night and it was absolutely scrumptious! Great recipe, Rob! Jen)
